ANIMAL WELFARE

We conduct inspections in every single breeding farm that supply us buffalo milk. We do it to make sure that the animal welfare legislation is followed, in particular reg.CE 853/04 and reg.CE 882/04.
Moreover, we developed our own checklist to make sure that three aspect are respected:

Protocols and good practices

Number of employees per animal
Right amount of space for walking

OUR WATERS PATH

Water is essential for mountains and seas, for lands and skies and, obviously, for mozzarella as well.. Our priority is to check that the water we use is potable in and out of our company.

Water treatment

It arrives from public water supply. It is provided via mains water and it is used for production and cleaning.

 

Water monitoring

The italian institution called ARPAC checks yearly that the water we use is in compliance with D.L.gs. 31/01 

 

Water analysis

External laboratories check monthly the potability of our water.

 

Water depuration

Waste water is internally purified with the appropriate facility.

 

Waste of purified water

Water is discharged in surface water with no environmental impact.

 

Analysis of purified water

More analysis conducted by certified external laboratories check the purity of the discharged water.

Milk Pasteurization

 

Once pasteurized, buffalo milk is stored into refrigerated silos for around 12 hours before being manufactured

 

At this point a differentiation between PDO and non PDO takes place. Both lines follow the process below, the buffalo mozzarella that is produced with buffalo milk that undergoes a treatment patented by us, which extends the lifespan of milk without adding additives or preservatives, is considered non PDO.

 

Heating & coagulation of milk

With the addition of rennet and natural whey

 

Milk curdling

Curd is cut in specific vats called “polivalenti”

 

After being cut it is moved into dedicated tanks until it reaches the desired pH

 

It is then manually divided into blocks

 

Spinning

 

The blocks are put into the spinning machine

Manually or through dedicated molds, the spinned mass is “mozzata” according to the desired weight and size

Mozzarella is automatically moved to the cooling and salting tanks

 

Packaging and cooling

 

Each type of packaging has a dedicated line
